First i will start with GREEN PEAS MASALA RECEIPE which i have tried last and was a yummy combination with appam and barotta, also tastes gud with dosa and chapathi...
heregoes.......*GREEN PEAS MASALA RECEIPE*
boil grean peas in a pressure cooker seperately with little salt and turmeric powder..dnt use ready to eat peas that doesnt tast gud
heat oil in a pan -
add mustard seeds
onions - 2nos
green chillies - 2nos
ginger, garlic paste - 1/2tbsp
curry leaves, coriander leaves - little
tomato - 2 (fry well)
chilli powder - 1/2tbsp
dhaniya powder - 1tbsp
pepper powder - 1/4tsp
garam masala - 1 or 2 pinch(saute well until the aroma goes)
then add cooked grean peas and boil well
finally coconut milk - 3/4 cup
and allow it to boil once in simmer stage.

first cut paneer into pieces(finger size) and deep fry in oil and immerse it in a luke water and keep it aside, so that panner is cooked and also bcomes soft.
Ingre to fry and grind:
red chillies - 5/6
whole daniya - 2tbsp
pepper - 1/2tsp
vendhayam - 1/4tsp
patta, lavangam - 1/2
ellachi - 2 (nalla kadai le varuthu podichukanum without oil - kadai masala)
pan - oil 2tbsp
onion - 2
curry leaves - little
ginger, garlic - podiya cut pannadhu 1/4tsp
tomato - 2
then add that kadai masala - nalla vathakittu
finally add panner and fry well(in simmer stage) - DELICIOUS KADAI PANEER is ready.

This receipe is especially for YOGA * MUTTON BIRIYANI*
Just before starting the receipe soak the basmati rice in water for 10-15mins. before that keep all the ingredients ready and cut the onion and tomatoes first so that the time taken to prepare the masala and soaking the rice will be correct...THIS IS FOR 1KG BASMATI RICE
Cooker - heat
ghee-2tbsp
oil - 1tbsp
onions - 6(thin slices)
green chillies - 8/10nos(slit into two)
once onions are cooked then add mutton
add salt - fry well
engi, poondu paste - 3/4 tsp full
saute well untill the aroma goes
then add coriander - hand full(cut)
mint leaves - hand full (cut)
fry everything together
then add
chilli powder - 2tbsp
patta - 5pcs, lavangam - 5/6pcs, elachi - 12pcs - grind it once in a mixie and add this
then saute well for 3mins
then add tomato - 5(thin slices)
curd - 1/2 cup
now add water and rice (my measurement is 1cup rice - 1.5 cup water)
Tips: before adding the rice just fry the soaked rice in a non stick pan then add it to the masala, jus keep for 1 full whistle and simmer it immediately and turn it off after 2mins. once the steam goes immediately open the lid and mix it once so that rice will not sticky (kozhaiyama irukum) try it out .....cheers
